Brown Rice Noodles w/ Mixed Veggies
One of my go to meals when I want something fast but also tasty. One of my favourites for sure :)
*Makes 1-2 servings.
Ingredients
1 Clove Garlic
2 Tbsp Canola Oil
1 Tsp Sesame Oil
1/2 Cup Mixed Vegetables
100grams Brown Rice Noodles
Spices
Salt
Pepper
Parsley
Steps
1. Mince garlic and fry with 1/2 tbsp of canola oil.
2. Add mixed vegetables (I used Mann's brand Rainbow Salad mix) and another 1/2 tbsp of oil to pan.
3. Add salt and pepper, then fry vegetables for around 8-10 minutes until soft.
4. Boil brown rice noodles for 3-5 minutes (longer for softer noodles), strain, and add to pan.
5. Add parsley, 1 tbsp of canola oil, and the tsp of sesame oil to mixture and fry for 5-10 minutes.
6. Serve!
*Already gluten free because rice noodles were used
*To make this HCLF, omit oil and use vegetable broth for frying
