Protein Pesto Sauce


This recipe is for pesto sauce that's packed with protein! I love this on veggie sandwiches as well as pasta and toast.


Ingredients

1 Can (540mL)   Navy/White Beans
1 Cup (packed)  Fresh Basil
1/4 Cup              Spinach
2-4 Tbsp            Olive Oil

Spices
Salt
Nutritional Yeast (for cheesy-ness)

Steps

1. Blend all ingredients and spices in a blender or food processor (start with 2 Tbsp of olive oil and keep tasting until reaching desired taste and consistency).

2. Store in jar or container (will keep for around 1 1/2 - 2 weeks unless stored in the freezer).


*To make this HCLF, omit oil and add veggie broth and/or water (although it won't taste exactly like classic pesto).
